FSA updates allergen guidance for the out-of-home sector

The Food Standards Agency (FSA) has recently issued updated best practice guidance for food businesses in the out-of-home sector including restaurants, cafes and takeaways. This guidance emphasises the importance of providing clear and accessible allergen information to consumers, aiming to enhance safety and inclusivity for individuals with food allergies.

Key Updates in the FSA’s Guidance

The goal of the recommendations is to ensure that consumers can identify dishes containing allergens without the need to request information.  The updated guidance introduces several important recommendations:

  1. Written Allergen Information: Food businesses are now expected to make allergen information easily available in writing for non-prepacked foods. This can be achieved through various formats, such as:
  • Including allergen details directly on menus (both paper and digital).
  • Providing an allergen information booklet or matrix accessible to customers.
  • Displaying allergen information on boards or labels adjacent to food items.
  1. Encouraging Conversations: Alongside written information, the FSA emphasizes the importance of verbal communication. Staff should proactively engage with customers about their allergen requirements, fostering an environment where consumers feel comfortable discussing their needs.
  1. Staff Training: To support effective communication, it is crucial that all staff members receive comprehensive training on allergen management. This includes understanding the potential severity of allergic reactions and knowing how to handle allergen information accurately.

Implementing the Guidance: Practical Steps for Food Businesses

Adapting to these recommendations may require changes in current practices. Here are some practical steps to consider:

  • Assess Current Allergen Information Practices: Review how your business currently provides allergen information. Identify areas where written information can be incorporated or improved.
  • Choose Appropriate Formats: Decide on the most suitable method for presenting written allergen information based on your business model. Whether it’s updating menus, creating an allergen matrix, or using digital solutions, ensure the information is clear, accurate, and easily accessible.
  • Enhance Staff Training Programs: Implement regular training sessions to keep staff informed about allergen management protocols. Ensure they are confident in discussing allergen information with customers and understand the importance of preventing cross-contamination.
  • Encourage Open Dialogue: Create a welcoming atmosphere where customers feel comfortable discussing their dietary needs. Encourage staff to initiate conversations about allergens and reassure customers of your commitment to their safety.

Benefits of Adhering to the Updated Guidance

Embracing these best practices offers several advantages:

  • Enhanced Customer Trust: Providing transparent and accessible allergen information builds trust with consumers, particularly those with food sensitivities.
  • Improved Safety: Clear communication and proper training reduce the risk of accidental allergen exposure, safeguarding customer health.
  • Competitive Advantage: Demonstrating a commitment to inclusivity and customer well-being can differentiate your business in a competitive market.

The FSA’s updated guidance reflects a growing emphasis on consumer safety and inclusivity in the foodservice industry. By providing written allergen information and fostering open conversations, food businesses can create a safer dining experience for all customers. Implementing these practices not only aligns with regulatory expectations but also enhances your establishment’s reputation and customer loyalty.  For more detailed information and resources, visit the FSA’s official guidance on allergen management https://www.food.gov.uk/news-alerts/news/updated-industry-guidance-issued-for-food-allergen-information-in-the-out-of-home-sector.
